What a bright and cheerful morning it is from my bedroom window. We’ve had so many gloomy, overcast days recently, it is such a joy to see the sun shining off the snow and to hear the birds twittering in the backyard. Makes me want to go outside for a walk (YIKES! did I say walk???)
Anyway, today I have lots of housework to get caught up on. It was a week-end of getting caught up on sleep and very little got done. A sunny day ALWAYS makes me want to clean! So as soon as this is posted, I’m going to get some laundry started, get my stew all prepped for the pot and then get a jump start on baking for the week. I desperately need some bread and am trying a new recipe. I also need to get my tortillas made for the enchiladas tomorrow and the tacos and breakfast burritos later in the week.

Still looking for assistance here Kate. For instance you say you add raw veggies for lunch but tomato is the only veggie I see. Do we assume if it’s on the menu and not on your shopping list that it’s in the pantry? Fish sticks on the menu but not the shopping list. You have chicken enchilada but not chicken, so I’m double checking. Are these freezer stocked? And if it doesn’t read with meat…do we assume it’s a meatless meal?
Tina, you are absolutely correct. If it’s not on the shopping list then it is in my fridge, freezer or pantry. For example, the quiche is both broccoli (freezer) and diced ham (in fridge) and for the chicken enchiladas, I have several bags of frozen chicken breasts. I have 5# of carrots, 2 bags of celery, 2 cukes and zucchini in the fridge for our lunches (the cukes and zucchini will be used first so they don’t go bad). Generally, if it doesn’t say a meat, it is most likely meatless (except for the pizza, I have pepperoni on the list for that one).
