Well, I’m still not up to par yet with my back struggles so I’m planning another week of easy meals that my children can prepare if necessary. I’m actually feeling better, most days, and getting up and walking around is not too uncomfortable. But I want to still take it easy while I need to and standing at the stove or at the table in meal prep puts strain where I’d rather not have it. So, easy meals it is!
